The Coconut, Under the Skin
NIU Plant began by working closely with the coconut itself. Not as a commodity handled at a distance, but as a material understood through daily processing, observation, and repetition. To us, the coconut palm is one of nature’s most complete resources, yet it is often treated as routine rather than studied on its own terms.
Instead of moving quickly toward scale, we chose to stay deliberate. To pay attention to how the coconut behaves, where it responds, and where it requires restraint. This mill is where that understanding is formed and refined. What we establish here informs what comes next, including a future flagship facility built to carry this way of working forward with clarity and integrity.
Working by Hand and Eye
Coconut processing is labour-intensive and skill-dependent. Our systems are built to support people and protect product quality over time.
We work across edible and non-edible lines. For edible products, we think in kitchen terms rather than factory terms, like the kitchens many of us grew up around, where a loved one worked with care. That mindset guides hygiene, workflow, and knowing when to adjust as conditions change.
